1. Restaurant Gayza (Riad Relais & Châteaux Hotel)

From our 1st evening in Fez, we were looking for a choice experience in the medina, and we weren’t disappointed! Restaurant Gayza transported us into a refined universe where traditional Moroccan architecture meets culinary excellence. Located in a riad in the heart of the old town, the ceiling moldings, the Andalusian patio illuminated by a lighted fountain and the traditional arcades testifying to the ancestral skills of local artisans did not leave us indifferent. Once you’ve ordered your dinner, you’ll find that the atmosphere is enhanced by Arabo-Andalusian music and the performance of an oud player. You’ll also discover a meticulously staged setting, with beautiful pottery arranged around the tables and simple yet elegant crockery for the table setting.

Restaurant Gayza - Refined atmosphere

In the kitchen, chef Lalla Abida perpetuates a savoir-faire handed down from mother to daughter for several generations, revisiting traditional Moroccan dishes with brio. We particularly enjoyed the aniseed semolina appetizer, the fine Moroccan salads featuring pumpkin compote and excellent gnaoua beans, followed by the seafood pastilla and spicy fruit tagine. The black sesame bread is an excellent accompaniment to these dishes, which feature seasonal fruit and vegetables from local, sustainably-farmed producers. If you’d like to extend the experience, theHôtel Riad Relais & Châteaux Fès and its gourmet restaurant offer cooking classes with Lalla Abida, who runs the operation with the team.
The sommelier was a great help in matching our dishes to the many references on the wine list. In the end, we opted for the cuvée Tandem Syrah du Morocco 2021, a wonderful discovery!
The icing on the cake is that children are even entitled to their own gourmet menu up to the age of 10!

3. Ishq Restaurant

Open since October 2023, Restaurant Ishq took us on a journey with its surprisingly artistic decor and highly creative cuisine. Housed in a tastefully restored old house at the gateway to the medina, this place cultivates a remarkable sense of detail. First of all, the name caught our attention. The term exists in more than 30 languages in Africa, Asia and Europe, in various variants. A lot of poetry is already hidden in this bistronomic table name. “Ishq”, which means passion and love in Arabic, evokes a cuisine conceived as an act of hospitality, driven by the pleasure of receiving and sharing.
We loved the library and the cosy space, the black wrought-iron chandeliers and the traditional Moroccan straw wall ornaments that immerse you in a captivating atmosphere. You’ll notice the table decorations and colorful plates that evoke modern art paintings, giving the restaurant a real personality.

Once at the table, we discovered a fusion cuisine that subtly combines ingredients for an explosion of flavors on the palate. All dishes are homemade using local Moroccan produce. For our part, we were delighted with an appetizer of yellow pepper-pineapple velouté with goat’s cheese and pistou sauce, a lamb mouse with caramelized onions and steamed pear, and a pastilla with gazelle horn milk and orange blossom almond ice cream. The homemade sesame and poppy bread, served warm and soft, is the perfect accompaniment to this refined cuisine. Finally, before you leave, take a trip to the rooftop for a breathtaking view of the Merinid Tombs and the medina. A pleasure for your taste buds, your eyes will remember it too!

Now we’re heading for the new town or “Fès-Jdid”, where we turned a corner and pushed open the doors of Restaurant MB. This softly lit design establishment was conceived by architect Christophe Pillet, creator of an enveloping, mineral and graphic universe. Immerse yourself in this dizzying two-level space. Have you noticed that it is reminiscent of a luxurious indoor terrace, where cliffs of grey natural stone and walls of smoked mirror create infinite perspectives? We appreciated the sense of excess and openness to the sky that this contemporary setting provides. The muted ambience features red armchairs, dark walls and low lighting, inviting you to relax. Furniture designed by Italian manufacturers is inspired by contemporary art, combining comfort and modernity in every space.

The kitchen team fuses Moroccan terroir with French savoir-faire. On the à la carte menu, you’ll find revisited dishes accompanied by a fine selection of local and foreign wines. For example, you can enjoy Rossini beef filet roasted in its own juices with Macaire apples, royal pageot roasted with vegetables in chermoula sauce, or wild Saint-Pierre roasted on venerated risotto! 5. Café-restaurant Moulay Idriss (medina)

In the heart of the medina, on the pedestrian street Talaa Kbira, the Café-restaurant Moulay Idriss won us over with its authenticity and the generosity of its owners. Siham and her husband Driss welcomed us with great warmth in this small room adorned with Moroccan lounges with typical embroidery, worked wooden tables and woven carpets on the walls. We were touched by their story: they named their restaurant after their son Moulay Idriss, a name that also echoes the founder of the city of Fez in the 9th century. The small terrace overlooking the medina’s main street offers total immersion in the Fès atmosphere.

Siham’s cuisine revealed all the balance and depth of Fassi flavors, with traditional dishes ranging from breakfast with eggs and khliî (meat preserved in fat) to harira soups and couscous. We were tempted by an assortment of Moroccan salads, beef couscous and the famous mint tea served in pretty glasses. Traditional homemade bread made from fine wheat semolina is the perfect accompaniment to these carefully conceived dishes. All dishes are freshly prepared on site, which requires a little patience but guarantees freshness and quality!

Located on the main Talaa Kebira thoroughfare in the old town, opposite the Café-restaurant Moulay Idriss, Restaurant Le Tarbouche embodies the trendy new traditional cafés-restaurants that are bringing the medina to life. This charming establishment intrigued us with its modern take on the classics, combining color, flavor and popular ambience in an air-conditioned setting much appreciated on hot summer days. We discovered a cuisine that harmoniously blends Moroccan, Mediterranean and Tex-Mex influences under the direction of chefs Fadoua and Jacob.

The varied menu offers crispy beef, Moroccan salads and Oriental-style pizza, all served with fresh fruit juices. 7. Palais Laraichi restaurant (medina)

The Palais Laraichi Restaurant, located in the sublime riad of the same name in our selection of where to stay in Fez, perpetuates the Fassi culinary art. In a room adorned with traditional zellige mosaics, a central fountain and copper lighting fixtures, we were also impressed by the carved wooden doors and ceilings made by local craftsmen, as well as the large Moroccan lounges set up for meals. The Laraichi family will pass on to you their passion for pure Fassi cuisine, characterized by moderation in the preparation of dishes and the use of carefully selected spices and natural ingredients.

We admired this traditional residence, where zellige and tadelakt reveal all their brilliance, enhanced by the colorful traditional mosaics on the walls. The rooms, decorated in a style that combines sobriety and tradition, and adorned with local handicrafts, bear witness to the refinement of Moroccan art de vivre.

The roof terrace offers a spectacular view of the thousand-year-old city, particularly magical at sunset. Do you know what “Dar Diafa” means in Arabic? It’s a symbolic expression in Morocco, meaning “guest house”. Restaurant La morille Dar Diafa invites you to rediscover Moroccan hospitality in a warm and friendly setting opposite the Wilaya (building of the sub-regional administrative district of Fès-Meknès). You’ll be seduced by the refined white and beige interior decor, creating a large, airy space with good table spacing. Beautiful royal-blue crockery by modern Moroccan craftsmen, matched to the cushions on the armchairs and sofas, testify to the care given to every detail. The warm, festive atmosphere made a particular impression on us, not least thanks to the top-quality performers who added to the atmosphere.

Finally, the cuisine reveals all the culinary finesse for which the people of Fès are renowned. For example, you’ll enjoy an assortment of Moroccan salads including carrots, tchatchouka, broad bean salad and green beans, as well as tagines such as fassi chicken prepared as if at home, and “tenjia” or “tanjia” (only meat and spices, cooked in an elongated earthenware pot).

The menu favors short circuits and renowned partners such as Noor oil, ranked among the best in the world, ducks from Domaine d’Aghbalou near Fès and cheeses from Domaine de la Pommeraie, some thirty kilometers from the imperial city. You’ll discover seasonal creations such as green lentil cream and pan-fried foie gras escalope, fine goat’s cheese tart with eggplant elixir, or Rfissa with free-range coquelet prepared in the pure Fès tradition. 14. Restaurant Bistrot des saveurs (open Sundays)

During our visit to the new town of Fès, just a stone’s throw from several hotels, we chose the Bistrot des Saveurs. We liked its modern, colorful decor: wooden furniture, paintings hanging on the walls, artistic touches that create a warm, lively atmosphere. Sofian’s friendly, attentive welcome helped to make the meal enjoyable, as did the smooth service. We appreciated the convenient location, the tasteful decor and, above all, the freshness of the dishes. The cuisine features local Moroccan produce in simple, well-balanced recipes.

Bistrot des saveurs - Modern decor

The menu ranges from salads and vegetarian options to more substantial dishes. We tried the homemade Moroccan bread sandwich, topped with minced meat, red onions and a tomato marinade with a touch of harissa, accompanied by crispy home fries. The Caesar prawn salad, garnished with sun-dried tomatoes and walnuts, seduced us with its balance of flavors. As a drink, the detox juice combining lemon, cucumber, ginger, apple and celery proved refreshing and welcome after a day of sightseeing. Time to eat!

An emblematic establishment in the new city of Fez, here French gastronomy is reinvented in a refined yet dynamic setting, ideal for a dinner with friends or a business meal.

We appreciated the careful decor: pictures and paintings on the walls, modern furniture, wooden ceilings with worked moldings and large crystal chandeliers adding a chic touch. The menu is deliberately simple and efficient, with attentive service. There’s plenty of room to make yourself comfortable, and why not try one of the house’s most famous specialties: its mojitos.

Open continuously from midday to 1am, this restaurant adapts to your rhythm. Whether you’re a fan of late lunches or late dinners, you’ll find what you’re looking for at any time of day.

16. Le Grand Patio (Hotel Palais Faraj Suites & Spa)

Take the time, as we did, to enjoy a snack in the Salon de Thé Le Grand Patio at the Hôtel Palais Faraj Suites & Spa, where we loved staying! Located close to the medina, it was our second favorite of our stay. We appreciated the serene atmosphere of this central patio, adorned with a carved wooden library and punctuated by elegant arcades, where events and readings are regularly organized.

Tasting here means enjoying a refined setting that showcases the skills of Fez’s carpentry craftsmen while preserving the spirit of a traditional riad. We sipped mint tea accompanied by Moroccan pastries, served with great care, while admiring the colors and works of art that enliven this cultural venue. A soothing interlude, ideal for a first immersion in the atmosphere of Fez.

Concealed in the street and barely visible, the Corner Kitchen café-restaurant surprised us with its modern, comfortable ambience in a small, intimate space. This small restaurant has just 2 outdoor tables and one indoor room, creating an almost confidential atmosphere. The cuisine is simple and tasty, blending Vietnamese and Thai influences with a delicate Moroccan touch.

You can try the tasty pumpkin soup and the highly flavored mqila, a local specialty (a lamb-based dish cooked with fat and coriander). For a mint tea with pastries, or to enjoy a fresh juice in a relaxed setting, take a break at Café-restaurant The Corner Kitchen. The establishment even offers brunch

Several of the city’s restaurants offer dinner shows where Moroccan dishes are accompanied by Arabo-Andalusian music and sometimes dance, for an evening full of rhythm and flavor.   • Restaurant Gayza : we appreciated the intimate ambience of the place, punctuated by a musician playing the oud. A moment of relaxation to prolong the culinary discovery in a refined atmosphere in the heart of the Riad Relais & Châteaux Fès in the medina.
  • Restaurant Mouda Palace: this vast establishment offers several spaces to suit different moods: Kebba for greater intimacy, Almas for a convivial setting, and Mouda Rooftop for an evening on the rooftops. The cuisine of chefs Maalma Souad and Hajja Rabiaa showcases traditional flavors in a meticulous approach.
  • Restaurant Palais Bar Sahra: located near Bab Boujloud, this restored riad combines the charm of its Moorish architecture with the richness of Moroccan cuisine.
